Fresh Bruschetta from the Market

Nothing says summer better than fresh tomatoes from the Farmer’s Market, and the Starkville Community Market has been happy to deliver during this first month of the 2013 season! While fresh sliced tomatoes by themselves or on a sandwich are sort of summer’s rite of passage in the South, they also lend themselves to dishes with a decidedly more Italian flair.

A few weeks ago, Chef Paul Brasfield from Starkville’s own Bin 612 visited the Market to bring us a fresh and easy Italian creation using produce purchased that morning from our Market vendors. Chef Paul and the other chefs from the locally-owned restaurants in the EatLocalStarkville.com family regularly source their ingredients from area farmers and growers, presenting seasonal offerings to their customers that are truly local creations. Chef Paul’s culinary demonstration on May 25 featured a seasonal Italian Bruschetta served on sliced homemade artisan baguette from DeRego Breads (another Market vendor!). The tomatoes, fresh basil, red onion and garlic grown by local farmers are available most weeks from the Market’s regular farm vendors.

Chef Paul’s Italian Bruschetta is easy to make and creates a light and healthy summer appetizer or snack for your next outdoor party or brunch. We hope you enjoy adding it to your summer repertoire of fresh tomato recipes!

ITALIAN BRUSCHETTA

Three large tomatoes, seeded and diced
Half cup balsamic vinegar
1/4 cup olive oil
Half red onion diced
8 basil leaves-julienned
One table spoon salt and 2 tsp black pepper
4 garlic cloves minced

Mix all ingredients and sit for an hour under refrigeration. Serve cold over toaster bread or however you like!

At the Market: Strawberry Goodness with Chef Ty

Last Saturday, Starkville Main Street launched the 2013 season of the Starkville Community Market with a great crowd, live music and plenty of home-grown and hand-crafted goodness. The growers and activities for opening day were just a taste of what’s in store for the summer! Lots of fresh fun has been planned for each Saturday, and new farmers and vendors are being certified every week. In addition to the Market’s favorite growers and makers showcasing their fresh produce, baked and canned goods, and hand-crafted items, Market plans also include a schedule of culinary and gardening demonstrations to share ideas and information about using fresh foods in your kitchen and incorporating them into your garden at home.

Chef Ty Thames of Main Street’s Restaurant Tyler kicked off the summer series of culinary demonstrations last week with a delicious breakfast idea using fresh items he’d found just that morning at the Market! He created a sweet and creamy strawberry and basil yogurt spread served over homemade bread — a healthy, fresh and easy idea for breakfast, brunch, afternoon tea or snacks. The bread, strawberries and basil were all purchased from local vendors just a few booths away. As he prepared the snack samples for everyone to enjoy, Chef Ty shared with the crowd how he seeks out fresh ingredients like those found at the Market in creating his menu for Restaurant Tyler. He even uses items from some of the growers participating in the Market this summer!

There were lots of smiling faces leaving the table as Chef Ty shared his samples, and I believe there was line at the strawberry vendor shortly after! Ty was kind enough to share is recipe for Saturday’s morning snack so that it could be posted here. Enjoy making this snack at home, and keep your eyes open for more great demonstrations at the Market this summer.

STRAWBERRY & BASIL YOGURT SPREAD

1 cup yogurt
2 cups strawberries (diced)
1 cup pecans (chopped)
1 oz honey
1 tablespoon basil (chopped)

In mixing bowl, combine all ingredients and stir.

Yes. We Believe.

The answer is yes. In Starkville, we believe. And it has nothing to do with the numbers on a scoreboard at the end of 60 minutes. Statistics on passing and running yardage, tackles or touchdowns don’t begin to depict the stat sheet of what we believe.

We believe in the story of a small Mississippi town and its partnership with a land grant institution. We believe in the traditions built between the two that somehow inspire a nation — a nation with outposts throughout the globe.

We believe in the drive and commitment of our student athletes — on the field, in the classroom, in the community, in the spotlight. On a national stage or a secluded practice field, we believe they deserve nothing less than the unwavering support of the place they will call home for four years — the place their grandchildren will visit in years to come.

We believe in Mississippi’s young people. And their potential to change our state and the world when enabled with a higher education. We believe in agriculture and engineering and business and architecture and the arts — disciplines of excellence where the collective field of play is finding ways to impact real people through research and technology and innovation. We believe in the MSU winning records where they count the most — growing better food, making greener products, building stronger structures and communities.

We believe in a small community moved to show its true colors to the world with hand-painted signs and sentiments hung on brick and mortar. We believe in the signs that don’t make it to ESPN. The ones like “come on in” or “now open.” The signs of open doors between a town and gown welcoming students and locals and teachers and alumni to this shared cultural economy of Maroon and White.

Yes, we believe in Main Street — that thriving gathering place of traditional Southern culture we call “downtown” — growing as the center of a vibrant and diverse retail community. We believe in the power of the entrepreneurial spirit found here that emanates through small businesses, professionals, franchise owners and the representatives of worldwide companies who weave the fabric of Starkville business. We believe in Highway 12 and 82 and 25, thoroughfares showcasing the creativity and passion of an economy that stands in support of a great university. And we believe in every street and lane and avenue in between.

So, for those who wonder if we still believe, the answer is YES. We believe in a special team of young men, led by a special group of men and women, playing a time honored game in a special place we call Mississippi State University. We believe in the roar of Davis Wade Stadium. In the call of “Hail dear ole State.” In the clang of a bell founded in our “cow college” roots. We believe in the community of doctors and restaurateurs and shop owners and farmers and builders who have created the hometown of all who deem themselves “Bulldogs” since 1878.

And WE BELIEVE this is just the beginning.

Guest Post: DIY from Libby Story!

We have a special treat for Starkville Insider readers today! Main Street member, LIBBY STORY regularly offers up great style, unique finds and fun do-it-yourself projects on their blog. Since we’re welcoming all our MSU students to town this week, we invited Bekah, LS Creative Director, to come up with a special DIY feature for those ladies outfitting their apartment or dorm room for the school year. Have fun…

At Libby Story we are all about recycling and upcycling vintage goods. We think putting a modern twist on an object that has vintage charm is a great way to make something that’s one-of-a-kind. In this DIY, we tackle home/dorm decor with a lovely upcycled vintage rug!

STEP ONE: Tape your rug with painters tap or heavy masking tape on the areas you do not

want painted.

STEP TWO: If you printed out text or shapes, cut them out with your scissors or box cutter. Once cut, you can tape your stencil on the back (or use a spray adhesive if available).

STEP THREE: Adhere your stencil to the rug where you’d like it, apply pressure and make sure all edges are secured down.

STEP FOUR: Spray your color of choice over top of your rug. Try to keep your line of spray directly over the rug, since shooting at an angle may allow paint under your stencil… Try to be patient while it dries- we know the anticipation is killer.

STEP FIVE: Peel and reveal! Then try out some other patterns and colors– like this MSU Maroon chevron print!

Our Visit with MSU Softball, Part 1

Did you know that all home MSU Softball games are free? They are! When we heard from the coach that the players considered themselves to be “Starkville’s Team,” we couldn’t resist investigating a little further — especially since we’re always looking for fun things to do during Spring.  SO, we took some time to visit one of the Bulldog Softball open practices at the end of January. Kyle Nibblett with MSU Athletics was kind enough to give us a tour of the softball facilities and talk a little about the excitement surrounding MSU Softball these days.

 

During softball season, most home games are played 60-90 minutes prior to MSU Baseball games. Admission is free for Softball, so it’s a fantastic opportunity to add family fun to a great Bulldog weekend. Coach Vann Stuedeman is in her first season at MSU, and “VANNtastic!” is prepping the team for some stiff competition in one of the toughest schedules in the country.

This year, the team has some special things planned for home games including fun activities and prizes in “Right Field Lounge,” a guest first pitch at every game, and opportunities for area girls in uniform to join the team on field for the national anthem. During the SAVOR OUR SOUTH Super Bulldog Weekend, MSU Softball will play top-ranked Kentucky AND host the first ever Alumni Game featuring former All-Americans and Olympians. Yep, there’s LOTS to celebrate about MSU Softball this year! We’ll share our interview with Coach “VANNtastic”  in Part 2 of our visit. Meanwhile…

6 Things You May Not Know About MSU Softball:

1. The team and coaches unwind with a maroon pool table! When we saw it, it was covered with the official NCAA softballs for the year!

2. The 2012 MSU Softball team is the only one in the country to have TWO sets of sisters on its roster. Can you name them?

3. The team takes batting practice with a new volunteer coach who just happens to be an All-American as well.

4. MSU Athletics will break ground on a major stadium expansion after the close of the 2013 season.

5. MSU will host the 3-day softball SEC Tournament for the first time in 2014.

6. There are 5 top 15 teams coming to Starkville this year to play MSU!
